Eggie

My new recipe to try today was an Eggie. I heard about it on Martha Stewart Radio and found the recipe on her website.
I modified it a bit... I used half of an English muffin, skipped the garlic butter and did not add the green onion (scallion).
Steve ate it up for breakfast without complaint!
